    The cooking course gives a short introduction to Svan cuisine which has much in common with Georgian cuisine. Among different dishes which you will be introduced to, is khachapuri – bread with cheese, kubdari – bread with meat and kupati – sausage, as well as various types of cheese.  It is said that both kefir and yoghurt come from the Caucasus. In Svaneti today matsoni is most popular; it is similar to yoghurt, but has a slightly milder taste.  
     
    Svan cuisine is both exciting and diverse. Often, important decisions are taken at a table set for a feast with the local inhabitants gathering around the table. Gathering around a table could also help sort out disagreements and bitterness among enemies.  It was also not uncommon for disputes to be resolved around a table full of dishes. So welcome to the meal!
